July Foodie Pen Pal Reveal!!

If you haven’t heard of Foodie Pen Pals check out lindsey’s blog theleangreenbeanto find out more. This is my second month doing it and it’s such a great way to get to know other bloggers and get some fun goodies! and Lindsey is so great for hosting this for us!

This month my fpp was Jami and she sent me a fun questionnaire to get to know me, it had 10 questions that I really enjoyed answering. Definitely saved it to adapt for future use :). I’m not sure if the blog that is listed for Jami is correct because it hasn’t been updated since Oct 2011. Jami if your reading this, please send me your updated blog, I’d love to check it out!

She sent me a lovely little packaged that I’ve enjoyed so much! It included a produce recipe book since she knows that I love my produce and am vegetarian as well as some housemade strawberry-vanilla jam that is so delicious, some chocolate covered cherries (I’ve yet to try, but will soon!), some local goodies including honey, wild cherry soda, oatmeal with coffee! (have you heard of such a thing?) and some vegetable broth. I haven’t used the vegetable broth yet either, but am looking forward to it!

I just love the day that the package arrives, it’s like a little bit of christmas every month. I also enjoy giving my gift. I got a lady named Laurie that blogs over at lovelaughlaurie and loved getting to know her through her blog. If you want to see what I sent her, you can check it out here.

Last day of July, it’s bitter sweet. Just hope August doesn’t go by as fast, I’m not ready for summer to be over yet! I’m off to the gym and them home to FINALLY hang out with my honey. 20 days apart is just too long. Enjoy your evening 🙂

Welcoming August with a big bear hug

I have a few things I want to talk about today. First, I’d like to start off by saying that August is my absolute FAVORITE month of the whole year. I’ve loved it since I was a little girl.. August is my summer, it’s also my birthday month and since my birthday is at the end, I usually try and find ways to celebrate all month long. Growing up it was always fun because my birthday during the same time for ‘back to school shopping’ so it meant lots of new clothes. I pretty much keep the tradition still even though i’m not in school. I think of August as the last hooray before the gloomy winter/fall months. I usually spend all my time outdoors and come my birthday I’m so ready for fall clothes and organizing my life for a long winter.

I set goals for July and thought it’d be good to reflect on them and set a few new goals for August.

JULY GOALS
1. Drink More Water: I did well, took party in hydrateinjuly challenge and kept myself to 120oz a day! 
2. Run 115 miles: didn’t quite meet that goal, 85 miles total.. probably to account for the weekend i took off last week
3. Eat NO Meat – occasional seafood is okay: i probably had a total of 2 bites of meat and I didn’t enjoy it either time
4. Eat NO Gluten: i struggle, but it’s getting better.
5. Do Yoga at least once a week: failed 😦 
6. Eat More Fruits & Veggies: pretty much all i ate
7. Eat Less Sugar & Processed Foods: getting better, but only for the last few days.
8. Have Vegan Mind-Set: it’s there about half the time.
9. Try 3 New Hikes: so disappointed that i haven’t been hiking once 😦
10. Go CAMPING!: even more disappointed that i didn’t make it hiking..i blame my guy for being out of town most of july! 

So all in all I did okay, but would have liked to reach my goals a little better. For August, I think i’ll keep some of them, but make them a little more realistic for this month.


AUGUST GOALS
1. CAMPING
2. GORGE CONCERTS (cheating a little, going this weekend)
3. HIKING
4. YOGA (signed up for 3 WASUP yoga classes this month so a little cheating again)
5. NO MEAT
6. RUN 2 RACES

I think those are little more realistic for August!

I try not to talk too much about my personal life on here and use this as a place to share things based around fitness and food, but my guy has been out of town on business for 3 weeks! 3 weeks and he is supposed to be home tonight, maybe tomorrow and the anticipation is killing me! He was only supposed to be gone a few days so this wasn’t planned or expected and nothing I’ve ever had to go through before. I’ve been keeping myself busy with my workouts and runs, but this last weekend knowing he should be back any day has made it hard to stay busy. Crossing my fingers he really does come back tonight or tomorrow. Before I go too crazy.. i should find out any minute now.

Triple Berry Green Juice Smoothie + a little reggae

It’s hot here in the pacific northwest and i’m enjoying it! I love waking up and being able to put on a tank top and shorts and going for a run instead of wearing my only pair of long running pants and long sleeve zip up every day. I took last weekend off running and was a bad girl… i paid for it thats for sure. It feels good to run, not be hungover, I need to remember that when I decide to stay out late on a Friday night. I’m back on track this week though, I’ve ran 15 miles so far with 2 days of weight training. 15 more this weekend for a total of 30 miles this week, plus one more day of weight training and yoga!

With all the running and weight training my normal green juice just wasn’t cutting it, needed more protein to help with the recovery. Plus on these hot days all I want to do is drink smoothies! I created a smoothie I’m calling Triple Berry Green Juice Smoothie and it’s fantastic. I’ve made it every day this week. I recommend to all my foodie/fit bloggers to try it!

Triple Berry Green Juice Smoothie
FOR GREEN JUICE:
2 bunch kale
2 large broccoli stalks
1 large cucumber
2 green apples
1 half lemon
1 head cabbage
2 small tri-color carrots
(any combination on greens/veggies will work, I just throw whatever came from full circle in there)
FOR SMOOTHIE:
1 cup triple frozen berries
1 frozen banana
1 scoop (tablespoon) vanilla protein powder (i use rainbow light, only one i found that is vegan and gluten free)
1 scoop (tablespoon) PB2 Powder (could use peanut butter too, but I think this stuff is way tastier and it’s much better for you)
enough green juice to make it thin enough to drink (i don’t measure, just add some and if it’s too thick add a little more)

1. combine all produce into juicer, this can be done ahead of time which is what i did, enough to last for 2-3 days of juice.
2. add frozen fruit, protein, powder, pb2 and green juice to blender
3. blend until desired thickness and enjoy!

 

Rainbow Salad

Body Pump was awesome last night. Sometimes its all about who the instructor is and who’s in the class. Everyone was full on energy and really pumping. I upped my weights for the shoulder, triceps and back track and I’m feeling it today. I ran 4 miles this morning and now my legs are like jello! lots of stretching and icing tonight. Tomorrow’s schedule: 5 mile run, body pump and hot yoga.

 

 

When I first started to eat clean, I learned about the rainbow. The rainbow is making sure you incorporate each color of produce into your meal. Here is all the produce that makes up the rainbow:

Red (tomato, watermelon, red pepper, beets, strawberries, raspberries, cherries, grapefruit, pomegranate, apple, guava, red onion, Japanese persimmon)
Orange/Yellow (orange, sweet potato, mango, winter squash, papaya, carrots, orange peppers, tangerine/Clementine, nectarine, peach, apricot, Asian pear, Japanese squash)
Dark Green (spinach, kale, swish chard, mustard or collard greens, avocado, asparagus, artichoke, bok choy, green cabbage, Chinesecabbage, Brussels sprouts, broccoli, green pepper, watercress, kiwi, apples, avocado, cilantro, basil, parsley, mint)
Blue/Purple (blueberries, eggplant, concord grapes, purple cabbage, blackberries, plums)
White (garlic, cauliflower, onions, ginger, Japanese radishes/Daikon, burdock root, Shiitake, Maiitake mushrooms, Jicama)

Last night I made a rainbow salad for dinner. It was delicious!

Rainbow Salad with Dijon Mustard Vinaigrette
Red: tomato
Orange/Yellow: shredded carrots
Greens: spinach, arugula, broccoli (shredded and florets)
Blue/Purple: cabbage, raisins
White: onions, mushrooms
also added a little sunflower seeds for garnish

Mustard Vinaigrette
1/4 cup apple cider vinegar
1 1/2 tbsp dijon mustard
1/2 cup cold pressed olive oil
salt and fresh ground pepper
puree vinegar and dijon mustard in blender, with blender on low slowly add in olive oil. add salt and pepper and stir. drizzle over salad

busiest week ever and no sugar

I apologize in advanced if I don’t get to blog much this week. This is a week of events for my work and I somehow got signed up to work every one of them. I like working events for the most part.. the hardest part though is all the food and drinks! It’s hard to not sample along as you work. Yesterday we worked a pretty cool one down at the bell harbor and it was set up so nice, the restaurant next to us was doing “chocolate salami” umm… yes you heard me! Yesterday was going to be day 1 of no sugar and then they go and throw chocolate salami at me… it was so interesting.. it wasn’t actually salami, just shaped like salami. It was a dark chocolate log with cookie and nuts in it, Delicious! and to back up a little we went to Elliotts for Happy Hour before the event and they had a fresh berry shortcake on the menu, picked fresh local berries daily.. how could we pass that up. So my day 1 no sugar started before I even got to the event, ooops!

So today, is day 1 no sugar all over again and so far doing well.. it’s not until after lunch do I really start craving sugar. This might not have been the best week to cut out sugar.

I started my day off with a banana and rice cake with peanut butter. I’m going to have a fresh juice of (cucumber, all sorts of berries, peaches, apricots, beets, lemon, ginger, celery) for lunch, watermelon for snack and make a big salad for dinner with all my produce from full circle that I got to go through before this week’s delivery. I missed the gym this morning so I’ll be going after work… I plan on doing body pump, 1 mile stairs, 1 mile elliptical and end the night with hot yoga.

I sent my Foodie Pen Pal gift yesterday.. always so exciting to send that out. Can’t wait until reveal day.
