This is my first month being apart of the foodie pen pals. It’s an awesome program for bloggers and those who like to read blogs and I encourage you to check it out. Lindsey has put a lot of work into making this happen for us and thanks to her we are able to meet some fun individuals and get introduced to blogs we otherwise would not have. By the way I also really loved getting to know Yaitza who I found I had a lot in common with and has become a big inspiration for me. I will continue to follow her blog daily 🙂

My FPP was Robin from

Robin was so thoughtful with her gift. I was so surprised and so thankful. She found out form my blog that I was struggling with drinking water so she sent me a couple of water bottles, one she had marked with different hours in the day so to help reach my water goals during the day while I’m at work. It has been super helpful!! She also sent me a bunch of treats all of which I had never tried. She paid great attention to the fact that I’m vegetarian and gluten free and my obsession for peanut butter! She sent me some really nummy cashew/almond/peanut butter and dried apple chips that I snacked on all week. Also some creamy peanut butter which I made little peanut butter cinnamon cookies with the annie’s snicker doodle bunnies she sent.

It was fun getting to know her and following her blog. You can really see her passion for cooking and how busy she is with her family. It was such a thoughtful gift, I can only hope her gift was just as nice.

Can’t wait to read what others got and to participate again in july!

10 Goals for July… Plus Some Fun Food.

I can’t believe it’s almost July.. I don’t feel ready for summer at all.. it might be because I’m still wearing scarves and boots (thanks seattle weather) or the fact that I have no camping trips or plans for the 4th!

Last year this was a very weird time of my life. I had realized that my 3 year relationship with the guy I was living with was coming to an end. He was my best friend and we shared so much together including our amazing pup and I knew he was very clueless that I was very much falling out of love with him. I couldn’t admit it to anyone, was having a hard time even admitting it to myself. My best friend had just ended her year long relationship and came to live with us while she was looking for a place so I focused all my time on helping her through the break up so I wouldn’t have to deal with my situation, which meant a lot of drinking. I forced him to go on as many camping trips without me as he could as to avoid the enviable as long as I could. Especially since we had a trip to Hawaii planned at the end of the summer for a wedding. My drinking/partying also lead to eating whatever I wanted, not exercising at all and ultimately my most unhealthiest low. We did finally break up on my birthday in August, bad timing, I know! I blame myself for that though since I obviously couldn’t keep hiding my feelings and he eventually caught on.

I bring this all up because it was this journey and the journey of being newly single that lead me to finding love for myself and a path to a healthy, mindful self. I truly believe that we have to experience moments in our lives that bring us to the next. And if I needed to not care about myself, my health or the way I felt to lead to the moment I feel right now then it was worth it. So too make sure nothing gets me off track this summer I have created 10 goals for July.

1. Drink More Water
2. Run 115 miles
3. Eat NO Meat – occasional seafood is okay 🙂
4. Eat NO Gluten
5. Do Yoga at least once a week
6. Eat More Fruits & Veggies
7. Eat Less Sugar & Processed Foods
8. Have Vegan Mind-Set
9. Try 3 New Hikes



I don’t think my goals are too hard to hold myself too, but if I cheat, you’ll be the first to know. We can have a recap at the end of July.. hopefully by then it’ll feel like summer 🙂

On to a more fun topic.. food! I haven’t posted much about food lately, because well I haven’t been cooking.

Dinner last night was too good not to share!
Quinoa & Veggies
1 cup cooked quinoa
handful of Raw Spinach
Onion, Garlic, Zucchini, Green Pepper, Mushrooms, Rainbow Chard all sautéed together with a little coconut oil
steamed broccoli
Corn on the cob
Green Onion


What I did:
cooked the quinoa in my rice cooker
boiled the corn for 10 mins
steamed the broccoli for 4 mins
sauteed the garlic, onion, green pepper and zucchini in coconut oil until almost done
added the rainbow chard and mushrooms, mixing together until cooked
Added cooked quinoa to veggies
Put all cooked ingredients over a bowl of raw spinach
added chopped avocado, green onions, and little drizzle of sriracha

Breakfast this morning: GF Oatmeal with dried fruit, walnuts and almond milk







Lunch: Tahini Broccoli Cashew Salad (gf, vegan) from Flying Apron. I will learn how to make this and eat it all the time, it was soo good!!!

cardio and tv

I ended up having to cancel my tv service and the new service isn’t getting installed until tomorrow.. which normally isn’t that big of a deal because there are plenty of other things that can entertain me, like putting my clothes away (boring!), but last night was the 2 hour SYTYCD (so you think you can dance) top 20 reveal and I really didn’t want to miss it since it’s my favorite guilty pleasure besides the bachelorette. So I decided what’s a better way to watch it then at the gym while doing cardio. And because I felt bad that my dog would have to wait for me for the 2 hours of guilty pleasure I took him on a mile run around the park first.

2 hours later and 10 miles of stair stepping, elliptical and bike my legs were tired and I was starving! it was 10pm though and I didn’t really want to eat a big meal. I forgot it was Wednesday and my full circle produce box was waiting for me when I got home. What a treat.. I enjoyed nectarines, oranges and grapes plus the rest of the juice I made yesterday. It was a perfect post work out treat that didn’t leave me feeling too full or heavy right before bed.

My room window has a direct view of the sunrise and I woke up at 5am to see a beautiful sunrise beginning and I knew I should get up and run my scheduled 4 miles, but I was so tired and decided I would do it after work, let my legs rest a little longer. SO back to sleep I went. Of course when I woke up at 7am I was regretting not going for a run because I’m not a big fan of running after work, but my legs were happy.

After work I’m going to bodypump class because i’m missing weight training and they just released the new edition! and then i’ll head outside to run my scheduled 4 miles. I like to push it on thursdays since I get a scheduled rest day on fridays so i’ll probably do the 8pm hot yoga class after my run.

When I do these late night work outs, I struggle with what to eat post work out. I’m usually pretty hungry, but I don’t like to eat a big meal before bed. Any suggestions?

its wednesday already

That half marathon took a lot out of me. I don’t even know what happened the last two days. Even though I kind of wish I could rewind and start this week over because I like to be on track at the beginning of the week, I’m happy it’s wednesday and half the week is done already.

Yesterday afternoon I got a fun package from my foodie pen pal! Can’t wait to share what was in the box. Such a fun and thoughtful box it was.

I didn’t make it to hot yoga last night, the boy decided he wasn’t too tired after the gym to come see me so we ate red robin salads while chatting and watching a movie. It was a relaxing night.

I was able to run 4 miles this morning without too much pain. My right knee is still pretty swollen, but I have no idea why and it doesn’t hurt too bad so I think I’m safe to run. Plus it’s only 5 more weeks when I have to do 13 miles as apart of my training and then 4 miles the next day so no more using “i’m taking a break because I ran a half marathon this weekend” as an excuse.

My appetite sure has been crazy ever since I ran the half though so i’m trying to get it back on track. I made a juice this morning with the rest of the produce I had from full circle. I only drank half of it and since I couldn’t stop snacking all day long, I’m going to have the other half for dinner.

Today is off to great start. Did an hour long work out this morning consisting of 1 mile of stair stepper, 3 reps of 15 hip abduction/adduction, 30 min CXworks core class and 1 mile on the treadmill, speed 7.5. Hot Yoga tonight after work.

I’m sitting at my desk working and can’t stop moving my body… this is a great morning playlist so thought I would share!
